Recipe Month


This is another one of my sister's vegetarian recipes which has become a family favorite.




Broccoli Risotto Torte

Ingredients
225g/8 oz. broccoli---cut into very small pieces
1 onion---finely chopped
2 garlic cloves---crushed or chopped
1 large yellow pepper---sliced
30ml/2 tbsp. olive oil
50g/2 oz. butter
225g/8 oz. risotto rice
120ml/½ cup dry white wine
1 litre of vegetable stock
Salt and ground black pepper
115g/4 oz. parmesan cheese---coarsely grated
4 eggs separated
Sliced tomato and chopped parsley for garnish

Blanch broccoli for 3 mins. drain and reserve
In large saucepan, sauté onion, garlic and pepper in butter and oil for 5 mins. until soft
Stir in rice, cook for a minute then pour in wine and cook, stirring mixture until liquid is absorbed
Pour in stock, season well, bring to the boil and lower to simmer. Cook for 20 mins. stirring occasionally
Meanwhile grease a 10 inch round, deep tin and line the bottom with greaseproof paper.
Stir in the cheese and allow the mixture to cool for 5 mins.---then beat in the egg yolks
Whisk the egg whites until they form soft peaks and carefully fold into the rice mixture---then slowly add the broccoli pieces
Turn in to the prepared tin and bake at 350 degrees for about 1 hour until risen, golden brown and slightly wobbly in the centre
